Margarita Chicken Rice Medley


3 tablespoons butter or olive oil
1 large onion, diced
2 cloves garlic, diced
8 oz. fresh or canned mushrooms
2 cups (approx 2 breasts) Pottstown's Margarita Chicken Breasts, cubed
1 package Rice River Farms Midwest Medley Rice, or any other of their Medley rices, cooked with its seasoning packet
1/2 cup toasted almonds, slivered or sliced


Heat oil in a skillet and add the onions, garlic and mushrooms.  Saute' until the onions are translucent.  Bake the chicken breasts for 45 minutes or until done.  Grilling is also acceptable.  Add the cooked chicken to the skillet and stir.  Stir in the cooked rice (instructions for cooking the rice are on the packets).  Sprinkle almonds on top and serve!
