4 Garlic Butter marinated boneless skinless chicken breasts from Pottstown Meat & Deli
1/2 cup crumbled cooked hickory smoked bacon from Pottstown Meat & Deli
1/2 cup crumbled sun dried tomato w/ basil feata cheese (also available at Pottstown)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
28 oz can diced tomatoes
1 tablespoon dried basil
Carefully cut a pocket in each chicken breast. Fill with bacon and cheese, then secure with toothpicks. Sprinkle outside of breast with salt and pepper. In a large skillet, brown chicken in oil.
Add the can of tomatoes to skillet. Sprinkle with basil. Cover and simmer for 10 minutes. Uncover and simmer 5 more minutes or until the chicken is no longer pink and the tomato mixture has thickened.
Enjoy with a glass of pinot grigio or a nice chianti.
